Ingredients

Cinnamon Streusel

  • 1 cup All-Purpose Flour
  • 4 tbsps vegan butter, room temperature
  • 1 tsp cinnamon
  • 3 tbsps brown sugar
  • Pinch of salt

Peach Filling

  • 3 peaches, sliced
  • 32 oz canned sliced peaches
  • 15 oz canned peach halves
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • 1 tbsp vanilla extract
  • ½ tsp salt
  • 4 tbsps vegan butter, melted
  • ½ cup sugar
  • ¼ cup brown sugar

Biscuit Topping

  • 2 sticks (227g) vegan butter, cold and cut into cubes
  • 3 ½ cups all-purpose flour
  • 1 ½ tbsp baking powder
  • ¼ tsp salt
  • 1 cup Califia Farms Vanilla Oatmilk, cold

Instructions

  • Vegan Peach Cobbler with Cinnamon Streusel By Britney Breaks Bread In a small bowl, combine flour, vegan butter, cinnamon, brown sugar, and a pinch of salt. Mix together until small crumbles form. Add to the freezer until ready to use.
  • In a large bowl, combine freshly sliced peaches and canned peaches. Add cinnamon, nutmeg, vanilla extract, salt, melted vegan butter, and sugar and brown sugar on top. Mix together until peaches are fully coated in sugar and pour into a 9-inch pie pan or cast iron skillet. Set aside.
  • Preheat oven to 400 degrees F.
  • Cut cold vegan butter into cubes. Combine flour, baking powder, salt, and vegan butter in a bowl. Mix together with your hands until butter is incorporated into flour and the texture of the flour is pea-size crumbles. Add Califia Vanilla Oat Milk and continue to mix and knead until a shaggy dough forms.
  • Add dough to a lightly floured work surface. Knead dough into a rectangle and cut into four pieces and stack on top of each other.
  • Knead into a rectangle again and use a 2-inch biscuit cutter or cookie cutter to cut small biscuits out of dough. Repeat this step until all scraps are used.
  • Add biscuits on top of peach filling and bake for 45 minutes.
  • Remove cobbler from oven and sprinkle streusel on top and bake for an additional 20 minutes.
