- 4 Bananas, very ripe and soft
- ½ cup brown sugar
- ½ cup maple syrup
- 1 tsp maple extract
- 1 tbsp cinnamon
- 1 egg
- ½ cup butter, melted
- 1 ¾ cup all-purpose flour
- ½ tsp kosher salt
- 1 tsp baking soda
Cinnamon Streusel
- 4 tbsps butter, melted
- ½ cup brown sugar
- ½ cup all-purpose flour
- 2 tsps cinnamon
Preheat oven to 350 degrees F. In a small bowl, combine melted butter, brown sugar, flour, and cinnamon. Mix together until crumbly. Add to the refrigerator until ready to use.
In a large bowl, mash bananas. Add brown sugar, maple syrup, maple extract, cinnamon, egg, and melted butter. Mix together until all ingredients all incorporated. Add flour, salt, and baking soda and mix until a batter forms (batter will be slightly lumpy).
Spray a 9x5 baking pan with nonstick baking spray and add batter. Pour cinnamon streusel on top, ensuring there's an even coat across the top of the batter. Bake for 60 minutes.
Allow bread to cool for 5-10 minutes before cutting.
