Ingredients

  • 2.5-3 lbs Chuck roast
  • 1 tbsp Onion powder
  • 2 tsp Rosemary, diced finely
  • Salt and pepper, as desired
  • 2 Red onions, sliced
  • 4 Garlic cloves
  • 2 cups Dry red wine
  • 4 cups Beef stock
  • 4 sprigs Thyme
  • 2 cups Mushrooms
  • 3 tbsps Dijon mustard
  • ¼ cup Heavy cream
  • 3 tbsps Olive oil
  • 4 tbsps Salted butter

Instructions

  • Season chuck roast with onion powder, rosemary, salt, and pepper. Marinate for at least an hour, preferably overnight, on a cooling rack uncovered in the refrigerator. 
  • Add olive oil and butter to a large pot over high heat. Sear chuck roast on both sides. Add red onions and cook until the onions have softened. Add garlic and reduce heat to low. Add red wine, beef stock, and thyme. Cover with a lid and cook on low for 3-4 hours, until beef is fork-tender.
  • Remove beef from liquid and raise heat to high. Cook on high until liquid has reduced by half. Add mushrooms. Reduce heat to low and add dijon mustard and heavy cream. Whisk together and add the beef back to the cream sauce.
  • Taste for seasonings, add salt and pepper as desired.
