Equipment

  • 1 Stand Mixer
  • 1 Parchment Paper
  • 1 Baking Sheet

Ingredients

  • 1 ¼ cups Butter (cold) - about 2 ½ sticks
  • 1 ½ cup Brown sugar
  • ½ cup Sugar
  • 1 tbsp Vanilla extract
  • 2 Eggs
  • 1 tsp Blue gel food coloring
  • 3 ¼ cups All-purpose flour
  • 2 tsp Baking Powder
  • ½ tsp Baking soda
  • 1 tsp Kosher salt
  • 1 cup White chocolate chips
  • 12 Chocolate chip cookies
  • 12 Oreo cookies (additional 3-4 cookies for topping)

Instructions

  • Preheat the oven to 350 degrees F.
  • Add butter to a stand mixer with the paddle attachment. Beat butter until smooth, about 3 minutes, then add brown sugar and sugar. Continue to beat together for another 2 minutes.
  • Add vanilla extract and eggs, one at a time and then add blue gel food coloring.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and kosher salt.
  • Pour flour mixture into the wet ingredients and mix until just combined. Fold in white chocolate chips.
  • Scoop out ¼ cup of cookie dough and flatten in your hand. Place 1 chocolate chip cookie into the dough and place an oreo on top.
  • Mold the cookie dough around the cookies, ensuring that none of the cookies are sticking out. Crush up a few oreo cookies and place the cookie crumbles on top of each cookie.
  • Place cookies in the refrigerator for 20 minutes.
  • Bake in the oven for 12-14 minutes, until edges are crisp. COOKIES WILL SPREAD. Use the opening of a cup and place around the cookie and swivel in a circle to shape the cookie into a perfect circle.
  • Allow the cookies to cool on a wire rack for at least 20 minutes.

Notes

Helpful Tips
  • Do not overmix the dough because you will end up with tough, flat cookies.
  • Do not use room temperature butter for this recipe, it will cause the cookies to spread too much in the oven. The cookies will spread, however, room temperature will cause them to spread too much.
  • To prevent the Oreos and chocolate chips from drying out, ensure the cookie dough is completely covering both cookies.
  • For added fun, add edible googly eyes to the dough just before baking.
  • For the best cookies, I recommend using a stand mixer. You can use an electric mixer for this recipe, however, the batter will become very thick so keep this in mind.
  • I recommend using royal blue gel food coloring from Wilton, it's what gives the cookies their vibrant blue hue.
