Equipment

  • 9x13 baking dish
  • Mixing Bowls

Ingredients

  • 1 loaf Brioche Bread
  • ½ cup Salted Butter
  • 1 ¼ cup Brown Sugar
  • 6 Eggs
  • 1 cup Whole Milk
  • 1 tbsp Vanilla Extract
  • 2 tsp Cinnamon
  • ¼ tsp Nutmeg
  • ½ tsp Kosher Salt

Instructions

  • Preheat oven to 375 degrees F.
  • Slice brioche bread into thick slices.
  • Melt butter in a bowl and add ¼ cup of brown sugar. Whisk together and pour into a 9x13 baking dish.
  • Make the custard - add eggs, milk, remaining 1 cup of brown sugar, vanilla extract, cinnamon, nutmeg, and kosher salt to a large bowl. Whisk together until smooth.
  • Dip bread slices into the egg mixture and make sure both sides are coated. Place bread into the prepared baking dish on top of the butter/sugar mixture. Repeat until all bread is dunked into the mixture. Pour remaining leftover custard on top of the bread. (If preparing french toast for the next day, cover with plastic wrap and set in the fridge overnight)
  • Cover with aluminum foil and bake for 45 minutes, then remove aluminum foil and continue to bake for another 15 minutes.
  • Top the finished dish with whipped heavy cream, fresh fruit, chocolate chips, or any of your favorite toppings!

Notes

Tips
  • Having a busy morning? Turn this into an overnight brioche french toast casserole by prepping it the night before and simply pop it in the oven the next morning!
  • Stale bread is ideal for this breakfast recipe but fresh bread works too! Don't fret if you don't have old bread.
  • This is a great recipe for special occasions, the holidays, a mother’s day brunch, or just a really good make ahead breakfast for easter morning!
Substitutions
  • Try using challah bread if you love a buttery textured bread.
  • If you're fancy and love making bread, try making a homemade brioche loaf and use that in this recipe!
  • If you're watching your salt, feel free to use unsalted butter instead of salted butter.
  • Take this recipe to the next level and add a single layer of cinnamon streusel on top of the casserole.
