The roasted red pepper sauce is a sauce that's made in the oven and then pureed in a blender. It has garlic, fresh herbs, red peppers, and a little red pepper flakes for a nice kick! The crust is a simple 4 ingredient crust that's gluten free and have a beautiful flaky and crunchy texture.
Put all of the together and add sausage and cheese on top and it's a match made in heaven!
For this recipe, it's super simple. I used two packs of Bob's Red Mill's Grain Free Flatbread Mix and mixed it together with 2 eggs, baking soda, a pinch of salt, a little olive oil, and some water. Mix all of those ingredients together, cover and let it sit for 5-10 minutes. Then smooth the gluten free pizza dough onto a baking sheet lined with parchment paper!
I drizzled a little additional olive oil on top of mine and added a little bit of freshly cracked pepper for some more flavor. It's simple, easy, and so good!

This sauce does however contain a little tomato paste for flavor and color, but the roasted red pepper flavor is the dominant taste - which is exactly what we want!
No, not at all! Bell peppers are more so used for their peppery and fresh flavors. Bell peppers are one of those ingredients that always add a nice bright touch to whatever it's in. When they're roasted, they're even more delicious because they develop a smoky flavor. To enhance the flavor of the roasted bell pepper sauce, I added onion, garlic, basil, and a little red pepper and tomato paste. These ingredients really bring out the sauce and make it even better when pairing it with sausage and cheese.
I used shredded Monterey Jack Cheese and shredded Mozzarella cheese. Both cheeses give that nice cheese pull that we all know and love. They're also cheeses that add a nice flavor but aren't overpowering because the roasted red pepper sauce and sausage are strong. These cheese mellow out all of the spices and give this pizza that "mmmm" taste!
It's so good! Pairing these cheese with sausage and getting that melty gooey deliciousness, it's the best taste combo ever!
I started by making the sauce first. Preheat the oven to 425 degrees F and add a red pepper, onion, fresh herbs to a dutch oven and roasted for 30 minutes. Once the pepper is soft and tender, add to a blender and puree the sauce with tomato paste and salt and pepper.
In a skillet, saute the sausage until well done. Then, in a bowl, mix together ingredients for the crust and then flatten crust onto a parchment lined baking sheet. Pour about a ½ cup to a cup (you may have some leftover sauce) of the sauce on top of the crust. Sprinkle the sausage on top with cheese and freshly chopped parsley. Then bake for about 20-25 minutes... then you're done! Ready to eat!
