PB&J Overnight Oats with Bananas and Mixed Berries! I'm not a big breakfast person - BUT if I do eat breakfast, I find that I always want something heavy like sausages and eggs and toast or waffles. Ever since I've begun working from home, it's so easy to make the things that I want versus the things that I should be eating ... well, it's the new year and I need to start making changes to my diet.
PB&J Overnight Oats with Bananas and Mixed Berries
When I worked in the office, I would meal prep overnight oats on Sunday night and they would last until Tuesday and still taste really fresh and yum. By Wednesday, things got a little gnarly but the fact that I could prep for two days breakfast at once was pretty sweet. Not to mention, this breakfast is both satisfying and nutritious! It's gluten free, dairy free, no processed sugars, and almost vegan (I used honey but you can use stevia to make it vegan :)) Let me know if you try this out!
Ingredients
½ cup of old fashioned rolled oats
1 cup unsweetened almond milk
¼ cup full fat greek yogurt
2 tbsp peanut butter
1 ½ tbsp of honey
1 tbsp of raspberry preserves (strawberry works too)
½ banana, cut or smashed
½ tsp chia seeds
handful of mixed berries
dash of cinnamon
Instructions
- 12-24 hours before eating, use a 16 ox container, preferably a mason jar, and add oats, almond milk, greek yogurt, honey, and peanut butter.
- Prior to eating, add raspberry preserves, smashed banana, mixed berries, chia seeds, and dash of cinnamon to taste.
