Quick, easy, delicious casarecce pasta recipe with sausage in a garlic tomato sauce with parmesan and fresh herbs! This meal comes together in 30 minutes and is so good, you'll be going back for seconds!

I love a good one pot recipes that doesn't require any fuss! Lately, I've been enjoying simpler recipes that are full of flavor but simple to put together.

I don't know about you, but as it begins to warm, I do my best to keep the oven and stove usage at a minimum and this casarecce pasta recipe follows that notion.

I used Seemore's Chicken Parm Sausage for added more seasoning to my tomato sauce and then used crushed tomatoes and tomato paste, garlic, and fresh herbs to build the flavor even more!

Since everything was finished in about 30 minutes, I sat down and poured myself a glass of Cakebread Cellar's Chardonnay.

Needless to say, it was a GREAT evening. (nothing like relaxing with a good meal and a quality glass of wine)

Ingredients

When I first made this recipe, I made it with everything that I had in my pantry. All of the ingredients are pantry staples so no need to make a special run to the market (unless you're just out of something of course lol).

  • Casarecce Pasta (a Italian short pasta that literally translates to "homemade", or  casereccio)
  • Sausage Links
  • Garlic Cloves
  • Onion
  • Crushed Tomatoes
  • Tomato Paste
  • Fresh Herbs: thyme, rosemary
  • Seasonings: oregano, red pepper flakes
  • Reserved Pasta Water
  • Olive Oil and Heavy Cream
  • Parmesan

There's so much flavor in this recipe that you'll be making this recipe over and over. It's easily become one of my favorite dishes to make during the week because it's so easy to make.

How to Make Casarecce Pasta

As I mentioned, this is an easy one pot recipe. That being said, all fuss is let at the door.

First up, cook casarecce pasta until al dente. Reserve 2 cups of the pasta water and drain. Add olive oil to a large pot over medium heat. Slice up the sausage links and brown on both sides. Add onion, garlic, seasonings and herbs and saute together until fragrant, about 2-3 minutes. Season with salt and pepper.

Then add crushed tomatoes (do not drain tomatoes, keep the juice - it adds so much flavor!) and tomato paste and pasta water and bring to a boil.

Reduce heat to low and simmer uncovered for 15-20 minutes (sauce should thicken, if still watery, continue to simmer for an additional 5 minutes). Taste for salt, add as needed.

Add the casarecce pasta back into the pot along with freshly grated parmesan, heavy cream, and salt and pepper. Mix together and serve.

Garnish with fresh basil, burrata, and additional parmesan and red pepper flakes. (optional)

Tips for Making this One Pot Casarecce Pasta

  • If you do not have any casarecce pasta on hand, you can use what you have. This recipe will be delicious either way!
  • Make sure to adequately salt your water while boiling your pasta! This simple step seasons the pasta and adds so much flavor!
  • Cook the pasta until just al dente. This tip prevents the pasta from becoming mushy in the tomato sauce.
  • If you forget to reserve your pasta water, don't worry! You can use normal water or even chicken broth instead.
  • i highly recommend trying out Seemore Sausage! If not using this sausage, you can use one pound of your favorite italian sausage.

What to serve with Casarecce Pasta

There are so many options! My recommendations are of course my cheesy homemade garlic bread and topping it with as much parmesan cheese as your heart desires. I also added a piece of burrata on top, it's SO good.

Also, my roasted garlic labneh recipe is phenomenal with this pasta! An unlikely combo but a darn good one!

I'd be remiss if I didn't talk about wine pairings for this recipe. Cakebread Cellars Chardonnay goes impeccably well with this recipe. It's smooth, creamy, and slightly acidic. This wine with the Seemore Chicken Parm Sausage are a match made in heaven!

Recipe Swaps

  • For a dairy free version, omit the heavy cream or use your favorite nondairy milk. Also, omit the cheese and use nutritional yeast instead.
  • To make this recipe vegan, omit the sausage and follow the instructions on how to make this recipe dairy free.

One Pot Cassarecce Pasta with Sausages

  • Large Pot

Ingredients

  • 1 lb casarecce pasta
  • 4 links sausage sliced
  • 1 small onion diced (or 1 lb ground sausage)
  • 4 cloves garlic diced
  • 3 sprigs thyme
  • 1 tbsp fresh basil chopped, additional for garnish
  • 2 sprigs rosemary diced
  • 1 tsp oregano
  • ½ tsp red pepper flakes additional for garnish
  • 28 oz canned crushed tomatoes
  • 6 oz canned tomato paste
  • 1 cup Parmesan grated
  • 3 tbsps heavy cream

Directions

  • Cook Casarecce pasta until al dente. Reserve 1-2 cups of the pasta water and drain. Add olive oil to a large pot over medium heat. Add sliced sausages or ground sausage and cook until browned. Add onion, garlic, seasonings and herbs and saute together until fragrant, about 2-3 minutes. Season with salt and pepper.
  • Then add crushed tomatoes (do not drain tomatoes) and tomato paste and 1 cup of the pasta water (save the rest for later, if needed) and bring to a boil. Reduce heat to low and simmer uncovered for 15-20 minutes (sauce should thicken, if still watery, continue to simmer for an additional 5 minutes). Taste for salt, add as needed.
  • Add the Casarecce pasta back into the pot along with freshly grated parmesan, heavy cream, and salt and pepper. If pasta sauce is too thick, thin out the pasta with the remaining pasta water, adding ¼ cup at a time until desired consistency is reached. Mix together and serve. Garnish with fresh basil, burrata, and additional parmesan and red pepper flakes, optional
