Holiday season is officially in full effect! With that comes tons of parties – Friendsgiving, Thanksgiving, Thanksgiving leftovers, Christmas parties, Ugly Sweater Parties, Christmas … the list goes on. This is without a doubt the most wonderful time of the year. In addition to being the most wonderful time of the year, it’s also the busiest. With all of those parties, gatherings, etc. comes tons of cooking. And what is a result of cooking large amounts of food?! LEFTOVERS!
This is how this Caramel Cookie Crunch Extravaganza came about. Last weekend, Hubby and I hosted an awesome Friendsgiving party. We cooked everything from roast beef, sweet potato casserole, dinner rolls, Brussels sprouts, a turkey, roast pork, collard greens, Mac n cheese – and that was just the main course. For dessert, I made a few of my recipes from the blog – three chocolate chip skillet cookie, snickerdoodle cheesecake, and sage browned butter pumpkin pie with spiced meringue. Needless to say, everyone demolished almost everything. Almost. We had a bit of leftover snickerdoodle cheesecake. And that’s where it all began.

This Caramel Cookie Crunch Extravaganza recipe came about when I was sitting on the couch after a holiday party. I did not feel like cooking and took a look at my leftovers and noticed that I had some Caramel Cookie Crunch Gelato by Talenti in the freezer. I felt inspired by the expertly curated 5-layered Talenti Layers range. That’s when the wheels in my head began to spin about my own 5-layered masterpiece. I grabbed the Caramel Cookie Crunch gelato, my leftover snickerdoodle cheesecake, and then added some crumbled ginger snaps, cookie butter, and whipped up a little meringue. I took a spoonful of this master creation that I just compiled and honestly… honestly?! It’s the best thing I’ve ever eaten. No competition.
