In addition, this Smoked Goud and Caramelized Onion Puff pastry is VERY easy to make! With figs roasted in brown sugar, this dish truly comes to life.

It's summer and my wine of choice is Rose - all day. I recently partnered with 90 Plus Cellars to bring you this delicious recipe. It's cheesy and slightly sweet - and with caramelized onions, it adds such a beautiful umami flavor that we all know and love.

Ok, let's talk about this Rose!! This gorgeous wine is made from 100% organically farmed Grenache and Cinsault grapes. It has a subtle floral flavor with notes of berries and fennel. Towards the end, there's bit of acidity which goes so well with this recipe. It's light, bright, and perfect for summer!

This is a very easy recipe to make. We begin by preheating the oven to 400 degrees F and cutting about 10 figs in half and adding them to a pan with brown sugar, butter, and a pinch of salt. Mix it up and add it to the oven for about 20 minutes. While the figs are roasting, slice an onion and add olive oil and butter to a skillet over medium low heat. Add the onions and saute for 10 minutes. Add a tiny bit of water and honey and continue to cook over medium low heat until onions are jammy and brown.

Grab a sheet of puff pastry add shredded smoke gouda to the center of the pastry and add the onions on top. Fold the pastry corners in toward the center and brush with an egg and bake for 20-23 minutes. Add to a plate with the brown sugar roasted figs and eat!

Ingredients

  • 10 figs
  • ¼ cup dark brown sugar
  • 5 tbsps butter
  • 3 tbsps olive oil
  • 1 red onion
  • 1 tbsp honey
  • ¼ cup water
  • 1 block Smoked Gouda Cheese
  • 1 Puff Pastry Sheet
  • 1 Egg, beaten

Directions

  • Preheat oven to 400 degrees F.
  • Slice figs in half and add to an oven safe pan. Sprinkle 4 tbsps of sliced butter, dark brown sugar, and a pinch of salt. Mix together and add to the oven for 20 minutes.
  • Slice an onion. Add 1 tbsp butter and 3 tbsps olive oil to a skillet over medium low heat. Add onion to skillet and cook for ten minutes. Add 1 tbsp honey and ¼ cup of water and allow onions to continue to cook over low heat. Add a lid to the pan and continue to cook on low until onions are browned and jammy in texture = caramelized.
  • Remove figs from oven and set aside.
  • Lay a sheet of puff pastry flat onto a parchment paper lined baking sheet. Shred 1 block of gouda and add caramelized onions on top. Fold the corners of the puff pastry into the center and brush with a beaten egg.
  • Bake for 20-23 minutes.
  • Remove from oven and add to a plate. Add brown sugar roasted figs and eat up!
