I've been pretty busy lately and have been enjoying quick recipes. With this grain bowl, it took about 30 minutes to make and is ideal for meal prepping if you hold the tahini dressing on the side! Typically, we cook about three times per week and eat leftovers for 1-2 days after. Since I've started my blog, I cook daily but lately have been reverting back to how things used to be and am finding myself meal prepping more. It's just easier that way. I am trying to find my groove when it comes to cooking and want to put myself on a cooking schedule to maybe cook savory recipes three times per week and bake on off days/weekends. We'll see because I want to keep things fresh and give everyone a nice mix of recipes!
I've been seeing freekah everywhere as of late, but I have never tried it. Freekah is a grain that is used in a lot of North African and Mediterranean cuisines that is packed full of nutrients and protein. While grocery shopping this week, Whole Foods was having a sale on freekah so I decided to try it. I would like to happily report that it has a taste that's similar to barley or brown rice and is also similar in texture. It's a pretty easy swap for rice, especially given its nutritional content.
For this recipe, I combined a bunch of fun flavors to keep this dish fun. It's got a ton of veggies but isn't boring. It also has a ton of protein and even more flavor! The pickled onions used in this recipe are really delicious (the recipe is provided in the recipe block) but you can also use store bought. As an FYI, it's SUPER easy to make your own but I completed understand buying them to save on time and dishes. There's also a tahini sauce that I made to top off this bowl.
