
I'm beginning to think that I was that weird kid who loved vegetables and never needed to be forced to eat them. I love beets and I always have. My grandmother used to make them for me and would tell me that if I ate beets, it would make my cheeks rosy, so I gladly ate them! I usually cook beets alone in a large pot and eat them as is, they dont really need salt or pepper in my opinion because the natural earthy taste is what appeals to me the most.
Enough about how much I love beets - I received a really cool package from Carrington Farms with beet root powder! Carrington Farms is a company that provides high quality ingredients such as grains, seeds, and oils in the hopes of increasing accessibility of healthy foods to your kitchen! With everyone posting about dalgona coffee, it only seemed right to make a beet root powder alternative because beets are SO good for you. Not to mention, I am extraordinarily caffeine sensitive so coffee really wasn't an option for me. What I love most about using beet root powder is knowing that I am nourishing my body. Beets are known to be a vasodilator which is excellent for lowering blood pressure, repairing injuries, and increasing stamina when exercising. Beets also promote heart health and have anti-cancer properties! This recipe is gluten free and can easily be made keto/low carb/low suagr by using lakanto sweetner or stevia as well as using an unsweetened nut milk - like almond milk. Try this lovely morning treat and start your day off nutritiously!

Ingredients
2 tsp Carrington Farms Beet Root Powder
2 egg whites, room temperature
½ cup sugar OR ¼ cup lakanto sweetener
A glass of milk, any (I used almond milk)
Instructions
- Crack egg whites in a bowl and whisk. When eggs become frothy, begin to add sugar and whisk until the sugar is completely dissolved. Add beet root powder and whisk until powder is incorporated into the egg whites.
- Grab a glass of milk, fill it up ½ to ¾ of the way, pour the beet root mixture on top.
- Drink up! 🙂
