Chipotle Salmon with Pomegranate Arils is a delicious, quick, and easy weeknight recipe! This recipe takes about 25 minutes, start to finish and is perfect on those nights where you just do not feel like cooking. It is comprised of some smoky seasonings, sweet potatoes, and a little pomegranate on top to keep this recipe seasonally festive! What I love most about this recipe is how the smoky flavors and the sweetness of the pomegranate come together. I say this in almost all of my blog posts, but I LOVE a sweet and savory dish. It's literally the best of both worlds. You have your savory flavors and then out of no where, a hint of sweetness. And honestly? It gets no better than that.
So I know that I am not alone when I say that I love a quick recipe. A recipe that's mindless, doesn't take too much effort, and still tastes great? That's the recipe of recipe that has my name all over it. Also, because it's Fall, I HAD to incorporate some seasonal produce into this weeknight meal.
I headed over to my favorite Market, Balducci's, and picked up some pomegranates, fresh basil, and these beautiful pieces of wild caught Alaskan Pink Salmon. Whenever I'm at Balducci's I always feel so inspired to make something really delicious. Hence, this recipe for Chipotle Salmon with Pomegranate Arils.
So, let's talk about how to make this dish.
First, I preheated the oven to 425 degrees Fahrenheit. Chopped up one sweet potatoes, and laid them onto a baking sheet. I put the salmon on the baking sheet too and poured lemon juice, seasonings, and olive oil on top. I threw this into the oven ten minutes. Then I flipped the sweet potatoes and put back into the oven for an additional five minutes. (TIP: If you like your sweet potatoes super soft, remove the salmon from the baking sheet and bake sweet potatoes for an additional 10 minutes). Then, I garnished the salmon with pomegranate arils, basil, and a sprinkle of sesame seeds. And that's it! Easy peasy. Check out the recipe below!
