In a pinch and need something quick and easy? Look no further, this 5-minute chunky vegan queso is not only easy but is super delicious! It comes together in about 5 minutes and has less than 10 ingredients!

quick vegan queso - so simple and tasty!

With the Super Bowl coming up, I had to come up with a delicious and easy cheese dip that everyone could enjoy. Vegans and meat eaters both enjoy this chunky vegan queso dip because it's just delicious. It's got a little umami flavor, a lot of smoky notes, and most importantly - a nice cheesy flavor without all of the guilt.

Not to mention, this dip comes together in literally five minutes. Spoiler alert - I used PB2 Cashew Powder! Therefore, no long soaking of cashews needed and no need to melt or cook anything. Simply add all of the ingredients to a blender... and well, blend.

what is vegan queso made of?

This chunky vegan queso is made of PB2 cashew powder, nutritional yeast, cayenne pepper, chili powder, smoked paprika, cumin, garlic, water, soy sauce, and rotel.

You can use mild, original, or the hot versions of rotel as per your liking to jazz things up a bit! But these few ingredients make a stellar vegan queso.

What I love about this queso is that you can personalize it to your liking - whether that be adding hot sauce, adding more pepper or less garlic - you can really have fun with it and make it your own!

is vegan queso healthy?

Very much so! This chunky vegan queso is full of spices and fresh garlic, cashew powder, and a little soy sauce and nutritional yeast. It's not just full of flavor, but also protein and minerals and vitamins from the nutritional yeast.

This chunky vegan queso is especially good for those who are looking for a dip that they can indulge in without the guilt! Also, if you're gluten free, you can swap out soy sauce for tamari sauce!

how do you make chunky vegan queso?

It's super quick so don't be surprised.

step one

Combine chili powder, cayenne pepper, smoked paprika, garlic, nutritional yeast, water, cashew powder, and soy sauce in a food processor or blender.

step two

Blend together until smooth. Stir in rotel. and Enjoy!

That's it. Less than five minutes. Good chunky vegan queso dip. In less than five minutes. I'm not even joking!

what can i eat with chunky vegan queso dip?

So many things! I served this with tortilla chips but you can drizzle this on top of tacos, nachos, potato chips, fresh veggies! The possibilities are endless.

This chunky vegan queso comes together in five minutes! It's easy, flavorful, and full of smoky and spicy flavors!

  • ¼ tsp chili powder
  • ½ tsp cayenne pepper
  • ¼ tsp smoked paprika
  • 1 tsp cumin
  • 2 cloves garlic
  • 5 tbsps nutritional yeast
  • 1 tbsp soy sauce
  • 1 cup water
  • ¾ cup PB2 Cashew Powder
  • ½ cup Rotel
  • Cilantro, for garnish
  • Jalapenos, for garnish


  • Combine chili powder, cayenne pepper, smoked paprika, cumin, garlic cloves, nutritional yeast, soy sauce, water and PB2 cashew powder in a food processor. Blend until smooth, about 10-15 seconds.
  • Pour queso into a bowl and stir in rotel. Garnish with cilantro and jalapenos, optional.
